Dinner Time!

Now, I am not really one for sharing recipes or pictures of food etc, but today I have to break that cycle. First, because K has asked me to share some of my cheats recipes and secondly because tonight's dinner was super yummy, if I say so myself. It was also stupidly easy!

Ladies and gentlemen, I present to you the Sausage and Bean Bake...

I've been making this for a few years now after finding it in a cookery magazine; don't ask me which one, I can't remember what happened last week let alone where I found a recipe years back. Anyway, it's become something of a firm favourite as it is so simple to make that you could almost do it in your sleep.



Apart from a packet of sausages (I cut them into smaller chunks) and an onion, this is all the ingredients you need:

Chopped tomatoes, kidney beans in chilli sauce, Worcestershire sauce and a little extra chili
Then it's easy peasy. Fry off the onion and sausages for five minutes, add your Worcestershire sauce, then your tomatoes and kidney beans. You can then add a little extra chilli if you want to. Then it's just 250ml of hot water and leave to reduce.

Once reduced, transfer it to an ovenproof dish, cover with frozen potato wedges and pop in the oven (200°C) for 20 minutes. After which time you should have something like this...

Ta-daa!
...and serve, however you choose. See, stupidly easy, as I said earlier.

Now,  Miss D eats anything, but Miss L can be a bit fussy sometimes and she doesn't really like potato wedges, so from time to time, rather than serving with wedges, I serve with her favourite mashed potato with pesto stirred into it. So it's nice and versatile too.

So that was our dinner tonight :-)

  1. Sounds like a great recipe! I love anything with beans in, I find that they fill me up and they're nice and healthy.
